  • 1 TBS olive oil

  • 3 cups diced pumpkin or butternut squash 
  • 2 carrots, chopped 
  • 1 apple, peeled and chopped 
  • 4 cups low-sodium vegetable or chicken broth 
  • Salt, pepper and a pinch of cinnamon 
  • Fresh parsley or sage for garnish 

Directions: 

  1. In a large pot, heat olive oil over medium heat. Sauté onions and garlic until fragrant. 
  2. Add pumpkin, carrots and apple. Cook 5–7 minutes. 
  3. Pour in broth, bring to a boil, then simmer 20 minutes until vegetables are tender. 
  4. Blend until smooth, season with salt, pepper and cinnamon, and garnish with herbs.
